Hey taco lovers! It’s been awhile. A lot of things happened over the summer, particularly last month–we did our first wedding catering, introduced Mexican sliders, went to our first Oktoberfest and last week, celebrated our first anniversary. Yes, Catarina’s Foodtruck is officially one year old. It feels as though it was just yesterday when we did our very first gig at downtown square. We still remember vividly how we were all at once anxious, exhausted and thrilled about our grand opening. We’ve had our challenges along the way and we’ve learned so much in the past year.

 

Speaking of downtown square– we are headed to our beloved location next week! Our October schedule is up and we couldn’t be more excited to be back where it all started for us. Our goal has always been to be a part of the local foodtruck scene in Murfreesboro and we feel this the most whenever we are at Maple & Vine. Juan, owner & head cook of Catarina’s Foodtruck talks about this and more during his interview with Taco City.
